Banana Nut Bread

Ingredients

  • 2 cups all-purpose flour.
  • 1 tsp salt.
  • 2 tsp baking soda.
  • 1 cup butter.
  • 2 cups white sugar.
  • 1 tbsp espresso.
  • 2 cups mashed, overripe bananas.
  • 4 beaten eggs.
  • 1/4 cup sour cream.
  • 1 cup chopped walnuts.

Directions

  1. In a large bowl, mix the flour, salt, espresso, and baking soda.
  2. In a separate bowl, mix the butter and sugar until smooth.
  3. Stir bananas, eggs, sour cream, and walnuts into the butter and sugar bowl.
  4. Pour the wet ingredients into the flour, salt, and baking soda and stir until blended.
  5. Grease and flour two 9×5 in. loaf pans.
  6. Divide the batter evenly between the two loaf pans.
  7. Bake for 60-70 minutes at 350°F until a knife inserted at the crown of the loaf comes out clean.
  8. Let the loaves cool in the pans for at least 5 minutes, then turn out onto a cooling rack to finish cooling.
  9. Wrap in aluminum foil to preserve moisture and refrigerate for 2 hours or more before serving.
