Banana Nut Bread
Ingredients
- 2 cups all-purpose flour.
- 1 tsp salt.
- 2 tsp baking soda.
- 1 cup butter.
- 2 cups white sugar.
- 1 tbsp espresso.
- 2 cups mashed, overripe bananas.
- 4 beaten eggs.
- 1/4 cup sour cream.
- 1 cup chopped walnuts.
Directions
- In a large bowl, mix the flour, salt, espresso, and baking soda.
- In a separate bowl, mix the butter and sugar until smooth.
- Stir bananas, eggs, sour cream, and walnuts into the butter and sugar bowl.
- Pour the wet ingredients into the flour, salt, and baking soda and stir until blended.
- Grease and flour two 9×5 in. loaf pans.
- Divide the batter evenly between the two loaf pans.
- Bake for 60-70 minutes at 350°F until a knife inserted at the crown of the loaf comes out clean.
- Let the loaves cool in the pans for at least 5 minutes, then turn out onto a cooling rack to finish cooling.
- Wrap in aluminum foil to preserve moisture and refrigerate for 2 hours or more before serving.
