Carrot Cake
Ingredients
Cake
- 2 cups all-purpose flour.
- 2 cups sugar.
- 2 tsp baking powder.
- 2 scant tsp baking soda.
- 2 tsp cinnamon.
- 1 tsp salt.
- 1 generous tsp vanilla.
- 1 1/2 cups oil.
- 1/2 cup chopped nuts.
- 4 eggs.
- 3 cups grated carrots.
Frosting
- 1 stick of butter.
- 1 cup cream cheese.
- 2 cups powdered sugar.
- 1 tsp vanilla.
- 1 cup chopped pecans.
Directions
Cake
- Add all dry ingredients into a mixing bowl and mix by hand.
- Add eggs and liquid ingredients and mix with a blender.
- Add grated carrots into mixture by hand.
- Pour mixture into a lightly greased 9×13 in. pan.
- Remove air bubbles then bake for 50 minutes at 350°F.
Frosting
- Mix ingredients then let cool.
- After the cake cools, add the icing.
